Chinese Pork with Crispy Noodles

Ingredients:
- Lean pork fillet
- Red onion
- Red pepper
- Baby sweetcorn
- Carrot
- Oil
- Plum sauce
- Sweet chilli sauce
- Soy sauce
- Sugar snap peas
Method:
Into a roasting tin place 1 red onion, cut into wedges, 1 red pepper, cut into strips, 100g (4oz) baby sweetcorn, cut in half, and 1 carrot, peeled and cut into thin sticks. Drizzle over 15ml (1tbsp) oil and mix together. Place 450g (1lb) lean pork fillet on top. Mix together 60ml (4tbsp) plum sauce, 30ml (2tbsp) sweet chilli sauce and 10ml (2tsp) soy sauce and drizzle over the pork fillet. Cook in a preheated oven for 25-30 minutes. During the last 10-15 minutes of cooking add 50g (2oz) sugar snap peas, mix through the vegetables and cook for remaining time.
Serving Suggestion:
Serve the pork fillet cut into slices with the roasted vegetables and crispy rice noodles, or boiled egg noodles.
