Herby 'SLT' - Sausage, Lettuce and Tomato

Ingredients:

  • Pork and herb sausages
  • Lettuce
  • Beef tomato
  • Granary bread
  • Herby Mayo:
  • Mayonnaise
  • Fresh parsley
  • Fresh dill or fresh basil
  • Fresh coriander

Method:

Preheat grill and cook 4 pork and herb sausages for 10-12 minutes, turning once.

To make Herby Mayo: Mix 30ml (2tbsp) mayonnaise, 15ml (1tbsp) parsley, dill and coriander.

Spoon herby mayo over chunky granary bread, cut large beef tomato into slices, place on bread with lettuce leaves and sausages, a dollop of mayo and pickles of your choice.
