Roasted Loin of Pork rubbed with Ginger, Cumin and Orange with Cumin Spiced Potates and Ginger and Spiced Orange Apple Sauce

- Rind of ½ orange
- Sauce
- Eating apple

- Orange juice
- Ground ginger
Method:
Mix together 5ml (1tsp) ground cumin, 2.5ml (½tsp) cumin seeds, 2.5ml (½tsp) ground ginger, rind of 1 orange and seasoning. Remove the rind and dry a 1.25kg (2½lb) lean loin or leg of pork, and rub all over with mixture. Calculate the cooking time. Place on a rack in a roasting tin and open roast in a preheated oven.
Place 900g (2lb) potatoes, peeled and cut into small pieces and place in a saucepan of cold water. Bring to the boil and simmer for 10 minutes. Drain and place in the roasting tin with 5ml (1tsp) ground cumin, 2.5ml (½tsp) cumin seeds, 15ml (1tbsp) olive oil and rind of ½ orange, grated. Toss together to coat potatoes. Return to the oven for about 40 minutes.
For Ginger and Spiced Orange Apple Sauce: Place 1 eating apple, cored and cut into chunks, 1 cooking apple, peeled and cored and cut into chunks, 150ml (¼pt) orange juice, and 2.5ml (½tsp) ground ginger into a saucepan, cover and simmer for 15-20 minutes. Remove the lid for the last 5 minutes of cooking time until the fruit is softened.
Serving Suggestion:
Slice thickly and serve with seasonal steamed vegetables, potatoes and spiced sauce.
