Singapore-Style Sausage Fried Rice

Ingredients:
- 450 g (1lb) pork sausages
- 300 g (10oz) long grain white rice
- 30 ml (2tbsp) oil
- 150 g (5oz) baby corn, halved lengthways
- 75 g (3oz) beansprouts
- 4 spring onions, chopped
- 1 yellow pepper, deseeded, halved and thinly sliced
- 2 garlic cloves, crushed

- 30 ml (2tbsp) oyster sauce
- 60 ml (4tbsp) sweet chilli sauce
Method:
Cook the rice as per pack instructions. Heat a large frying pan or wok with 1tbsp of the oil, add the sausages and cook for 10-12 minutes, until thoroughly cooked, remove and keep warm. Cut the sausages in large slices on the angle. Keep warm. Heat the remaining oil in the same pan, then add the corn, beansprouts, spring onions, pepper, garlic and ginger and stir-fry for 3-4 minutes. Add the cooked rice and sausages and toss with the vegetables for 4-6 minutes or until the rice is piping hot. Add the oyster and sweet chilli sauces and stir-fry for 1-2 minutes.
Serving Suggestion:
Serve immediately with extra stir-fried vegetables.
